Baked Sausage, Polenta, and Sweet Potato

This is one of our super easy, super quick meals we like to do. I love the mix of sweet and savory in this dish. And bonus for those who are on restricted diets: it is dairy, gluten, egg, and soy free! (depending on your sausage of course).

Mild Italian Sausage
2 Sweet Potatoes
1/2 Sweet onion, finely chopped
Salt, to taste
Olive Oil (optional)

Preheat oven to 400. Chop everything into bite-sized pieces and put on a baking sheet. Sprinkle salt to taste. Mix thoroughly. Bake for 20 minutes, uncovered, mixing halfway. It is done when the onions are translucent, sweet potatoes are soft, and sausage is cooked through. It’s that easy!!


1. Depending on the fat content of your sausage, you may choose to add olive oil to the mix before baking.
2. I like to add salt to the veggies before adding sausage to the mix.
3. I have made this both with peeled and unpeeled sweet potatoes. Both ways taste yummy.
